Also known as Enokitake and Velvet Shank — enoki is a commonly cultivated saprotrophic gourmet mushroom with a distinctive appearance: long, thin, cream-white stems topped with tiny rounded caps, growing in dense clusters that are immediately recognizable from Japanese hot pot dishes, ramen, and Asian salads. The cultivated form is dramatically different from the wild velvet shank — it is grown in darkness and high CO2 conditions, which prevents cap development and produces the elongated stems that define its commercial appearance.

Flavor is mild, slightly sweet, with a pleasant crunch that holds up in both raw and lightly cooked preparations. Excellent in hot pot, noodle soups, salads, and as a garnish where texture matters. One of the few mushroom species genuinely good eaten raw.

Grows on hardwood pellets and supplemented sawdust. Unique fruiting requirements — low temperature, high CO2, and low light produce the characteristic long white stems of the commercial product. Fruiting at normal temperatures and light produces shorter, darker, more cap-heavy fruits that are equally edible but look different from the commercial form. An interesting species for cultivators willing to experiment with environmental parameters.
